I thought I'd better share this recipe since I've been giving it accolades on my Thanksgiving Wishes post! I discovered this delicious recipe quite by accident. It's written on the back of the Wind & Willow brand "Original Mulled Cider Mix" which I was told about from a casual conversation with a nice employee at a local shop. She hadn't baked it yet, but I told her I would let her know how we like it! Wind & Willow also makes many different kinds of pre-packaged soups, cheese balls, and desserts. If you're not able to find this brand, I would think any mulled cider mix could be substituted, such as the brand Aspen. I hope you enjoy it as much as Brian and I did! I think it's a great autumn cake!
Incredible Apple Cake
Combine dry cider mix, 2 beaten eggs, a yellow cake mix, a can of apple pie filling, and a cup of chopped pecans. Stir just until all dry ingredients are moistened. Pour into a lightly oiled 9"x13" pan. Bake at 350 degrees for 35 minutes. Cool and serve with a whipped cream topping!
I baked it longer than the 35 minutes, more like 40 to 45, so you need to watch it closely the last part of the baking period.
